Ratatouille Omelette
An unusual but really tasty way to get some of your five a day - and sooooo simple to make! This recipes serves 3-4 depending on how hungry you are and how big the pan is.
The ‘What’
- 8 eggs
- 200g can of ratatouille
- 40g butter
The ‘How’
Beat the eggs lightly and add in the ratatouille mix
Melt the butter in a frying pan
Pour in the egg mixture and cook until the omelette is set
Serve
